How does the ordering process work?

Bulk beef orders of whole and half cows are available between June and December; and you get to pick your order up directly from the butcher yourself.

Quarter Cows (100lb box), 50lb boxes of premium bulk beef as well as bulk ground beef bundles (50lb, 25lb and 10lb), are available all year round. These boxes and bundles can be delivered to you at one of our Farmers Markets, your home or can be picked up at our Farm Store in Sherman, NY.

      • How thick you want your steaks.
      • How much of the cow would you like in ground beef, and specialty cuts (Flank steak, skirt steak, hangar steak, flat iron steak, short ribs, brisket, bones, heart, liver, tongue, oxtail)
      • If you want to save bones for broth.

How much Beef will I get if I buy in bulk?

The amount of 100% Grass-fed beef that you’ll receive when purchasing a half cow or whole cow can vary as each cow has a different hanging weight. Typically:

  • A whole cow has a hanging weight of 550-680lbs
    • You receive 350-440lbs of meat after processing
  • A half cow has a hanging weight of 225-340lbs
    • You receive 145-220lbs of meat after processing

Is 100% Grass-fed beef really more nutritious?

Eating grass-fed beef is healthier choice for a balanced diet compared to grain-fed, factory farmed beef. Green Heron Growers 100% Grass-fed beef has:

  • More vitamin A: Our 100% grass-fed beef has 10 times more beta-carotene than grain-fed beef, which the body turns into vitamin A. Vitamin A is important for things like good vision, bone growth, and helping cells grow and work properly. It also helps protect the body from viral and bacterial infections and supports the production of white blood cells to fight off germs.
  • More Vitamin E: Grass-fed beef typically has three times more vitamin E than grain-fed beef. Vitamin E is a strong antioxidant that may help prevent heart disease, block cancer-causing substances in the stomach, and protect against cancer. It may also improve eyesight and help prevent cataracts from forming.
  • The right balance of omega-3 and omega six fatty acids: The balance of omega-3 and omega-6 fatty acids in our diet is important for preventing and treating health problems like heart disease, high blood pressure, type 2 diabetes, cancer, and arthritis.   • More dietary protein: Grass-fed beef is leaner and has more protein than grain-fed beef, with about 1.5 times more protein than regular USDA choice grain-fed beef. Research shows that eating lean beef can help lower bad cholesterol (LDL and VLDL), raise good cholesterol (HDL), lower blood pressure, and improve blood sugar control.
