We had one of our “bad days” here at the farm this week. As many of you know, we practice the “one bad day philosophy” at Green Heron Growers meaning our farmed animals have great living conditions filled with sunshine, healthy feed, fresh water and space to roam in our fields knowing that they are destined for one bad day, which is their final day of life when we process them to be able to sell and consume their meat.
We processed 99 chickens, this week over 2 days here at the farm with a small crew. As usual, we converted our farm store into our workspace and five of us spent all day Tuesday taking care of the butchering process. We use killing cones which have the added benefit of inducing a sense of disorientation, relaxation and euphoria in the chickens and make the process much easier on them and us. The chickens then went into a scalder, then into a whizbang chicken plucker to remove the feathers before getting evicerated and chilled. Wednesday was spent parting up the chickens into halves, leg quarters, wings, boneless breasts, bone-in breast, etc. We then shrink wrapped and froze our freshly butchered organic pasture-raised chicken and made a fresh batch of chicken bone broth which are all now ready to be taken to market this weekend and are also available for purchase online or at our farm store 8am-8pm every day!
