If there’s one thing I love on a busy weeknight, it’s a meal that tastes amazing without asking much of me and bone-in chicken thighs always deliver. Bone-in cuts stay juicier, cook more evenly, and honestly just taste better. And with our organic, pasture-raised chicken, you really don’t need much, the flavor speaks for itself.
Here’s how I make an easy, cozy dinner any night of the week:
Simple Oven-Roasted Chicken Thighs
Ingredients:
-
1 pack of Green Heron Growers Bone-In Chicken Thighs (2 per pack — feeds 2–3 depending on appetite)
-
Salt & pepper
Instructions:
-
Defrost fully in the fridge.
-
Preheat oven to 350°F.
-
Place thighs on a baking sheet or oven-safe pan, skin side up.
-
Season generously with salt and pepper.
-
Roast for 45–60 minutes until the internal temp reaches 165°F.
-
If you want crispier skin (my favorite part!), turn on the broiler for the last 2–3 minutes.
That’s it. No complicated steps.
Some people like to marinate or brine, and that’s totally fine — but most nights, we just keep it simple and let good chicken be the star of the show.
Bone-in thighs are one of the most forgiving cuts to cook, and they always turn out satisfying. Serve with roasted veggies, rice, or whatever you’ve got on hand. A true crowd-pleaser!
Stay warm and happy cooking!
